Toasted Coconut French Toast w/ Brown Sugar Glaze
4-6 eggs
6 slices of bread
2 tsp vanilla extract
shredded coconut
Glaze:
1/2 cup butter
1/4 cup brown sugar
Whip eggs in fluffy. Mix in vanilla. Coat bread in egg mixture. Put on skillet or griddle. Sprinkle coconut on side that is face up. Flip and cook until coconut is toasted.
Glaze:
Melt butter in small saucepan. Add brown sugar and mix until blended. Bring to a boil, remove from heat and serve over french toast.

Ummmm, yum! Heaven. The glaze turns almost caramel-y and is so delicious over the toasted coconut. Thank you so much Kelley, for sharing this recipe with us! I don't often make a gourmet breakfast (okay, let's be honest...I don't ever make any sort of breakfast, let alone a gourmet breakfast), but this recipe just might make me change my mind!

This sounds/looks super! Now I want french toast for dinner, LOVE me some breakfast for dinner.... due to I normally only have coffee in the morn)
